(Serves 2 people)
- Cut the apple into thin slices and toss them in a bowl with a generous squeeze of lime and a sprinkle of cinnamon.
- Fry the apple slices in a non-stick pan until they start to caramelise. Then put the slices back in a bowl and set to one-side.
- Whisk the eggs until fluffy. If needed, you can also add milk to the mixture. Heat the oil in a non stick pan and cook the eggs without stirring over a moderate heat until the omelette is golden underneath.
- Place the apple mixture across the middle of the omelette and serve immediately.
