Sauteed Mushrooms With Garlic and Roasted Almonds



  • 250g of mushrooms
  • 1-2 teaspoon of chopped garlic
  • 1 tbsp of butter
  • 1 tbsp of olive oil
  • 1 tbsp of chopped coriander
  • 1/3 cup of sliced almonds
  • salt and grounded black pepper
Mushrooms are quite difficult to get tired of. There are so many ways they can be cooked!
They are an excellent source of nutrients such as selenium and iron. Plus they are very low in calories, so perfect to lighten up a heavy meal!

This recipe goes well with pretty much any dish. The roasting and unique combination with almonds and garlic will really enhance the mushroom flavor. I especially like to have it with mash potatoes or white meat for a Sunday roast or holiday meal. Here’s how to cook this tasty side dish.

(Serves 2 people)

Prep and cook time: 15 minutes


  • Melt butter and olive oil together in a large frying pan over medium heat.
  • Add the garlic and sliced mushrooms and cook for a couple of minutes until tender.
  • Add the almonds and cook, stirring occasionally, until golden brown, 2 to 3 minutes.
  • Season to taste with salt, coriander and freshly ground black pepper.
