Minty quinoa fruit salad with honey and lime dressing

Ingredients

(Serves 2 people)

Prep and cook time: 15 minutes

For the fruit salad:

  • 1 cup of quinoa (red or white)
  • 2 cups of water
  • handful of blueberries
  • handful of chopped strawberries
  • 1 sliced banana
  • 1 small peach

For the dressing:

  • Juice of 1 large lime
  • 1 tbsp of honey
  • 1 tbsp of fresh chopped mint

I don’t know what the weather is like out there but here in London, it’s baking hot. That’s where this fruit salad comes in.

With its refreshing honey and lime dressing and nutritious quinoa, it’s just the perfect recipe to keep cool during this summer heat!

Here’s how to make this delicious quinoa salad:

Instructions

  • Combine 1 cup of rinsed quinoa with 2 cups of water in a medium saucepan. Bring to boil for 10 minutes.
  • Let the quinoa cool to a room temperature. In a bowl, combine the fruits of your choice with the quinoa.
  • For the dressing- in a separate bowl, combine honey, the fresh chopped mint with lime juice.
  • Drizzle over the fruit salad and enjoy!
