Minty quinoa fruit salad with honey and lime dressing



For the fruit salad:

  • 1 cup of quinoa (red or white)
  • 2 cups of water
  • handful of blueberries
  • handful of chopped strawberries
  • 1 sliced banana
  • 1 small peach

For the dressing:

  • Juice of 1 large lime
  • 1 tbsp of honey
  • 1 tbsp of fresh chopped mint
This antioxidant and protein packed quinoa fruit salad is full of flavours and makes a perfect snack for summer or winter days. You are going to love it!

(Serves 2 people)

Prep and cook time: 20 minutes


  • Combine 1 cup of rinsed quinoa wih 2 cups of water in a medium saucepan. Bring to boil for 10-15 minutes.
  • Let the quinoa cool to a room temperature. In a bowl, combine the fruits of your choice with the quinoa.
  • For the dressing-  in a separate bowl, combine honey,  the freshed chopped mint with lime juice.
  • Drizzle over the fruit salad and enjoy!
