This antioxidant and protein packed quinoa fruit salad is full of flavours and makes a perfect snack for summer or winter days. You are going to love it!
(Serves 2 people)
Prep and cook time: 20 minutes
- Combine 1 cup of rinsed quinoa wih 2 cups of water in a medium saucepan. Bring to boil for 10-15 minutes.
- Let the quinoa cool to a room temperature. In a bowl, combine the fruits of your choice with the quinoa.
- For the dressing- in a separate bowl, combine honey, the freshed chopped mint with lime juice.
- Drizzle over the fruit salad and enjoy!
