Prep and Cook Time: 15 minutes
(Serves 2 people)
- Cut onion and mince garlic and let both sit for at least 5 minutes.
- In a steel skillet cook onions and chicken for about 2 minutes over medium-high heat, stirring constantly.
- Add ginger, garlic, spring onions, red chili and continue to stir for another 3-4 minutes.
- Add asparagus, soy sauce, and pepper. Stir together and cover. Cook for another 4-5 minutes. This may have to cook for an extra couple minutes if the asparagus is thick.
