Exotic salmon with mango,coriander and brown rice

Ingredients

  • 2 boneless salmon fillets
  • 1 mango, peeled and diced
  • 1lemon
  • 12  diced red pepper
  • 1 red onion, finely chopped
  • 1 tbsp olive oil
  • 1 tbsp of reduced salt soy sauce
  • ground black pepper
  • 1 cup of brown rice
Bring summer back to your plate with this salmon and its mango/coriander salsa! The unexpected mix of sweet and salty gives it a tasty and exotic twist. Add brown rice, and you’ll get all the nutrients you need for a very healthy meal. Here’s how to cook it.

Prep and cook time: 25 minutes

Instructions

  • Heat oil in a non-stick frying pan over medium-high heat. Season salmon with soy sauce and pepper. Cook for 5 minutes each side then add onion and red pepper until just cooked through.
  • Meanwhile, heat the brown rice following the pack instructions.
  • In a bowl, combine the mango, chilli, coriander, and lime juice. Taste and season with salt and pepper if needed.
  • Place salmon and rice on a serving platter. Spoon the mango and coriander mixture over and enjoy!
